Four Opening Bites

Four opening bites that begin the course, served on “Gwol” by woodcraft artist Lee Jeonghoon — a piece inspired by the roof-end tiles of a royal palace, bringing a traditional motif onto today's table. STORY · ECHOES OF THE PALACE TABLE

Charcoal and moon, the palace table

Sooti — a regional Korean word for charcoal. Moon — from the old root of the word, a night lit bright. The harmony of the two is where SUTIMOON begins.

A table in the dimly lit SUTIMOON hall

A plate that begins with charcoal

Every dish at SUTIMOON begins with the slow fire of charcoal. Its warmth and aroma, drawn out over time, awaken the depth of each ingredient and leave a quiet flavour and a lingering echo. Like moonlight breaking gently through the dark, dishes shaped through layered techniques rise from the embers with a harmony of their own.

Dotori guksu, acorn noodles in perilla-oil broth

A bowl drawn from the royal annals

Dotori guksu takes its story from a record in the Sillok ordering acorns from the mountains to be ground into flour and distributed to the starving. Acorn noodles in perilla-oil broth, finished with gamtae seaweed oil, Jeju bracken pesto and raw bigfin reef squid — ingredients of land and sea meeting in one bowl.

相生 — a table of mutual growth

It begins with relationships where both people and food can be sustained. SUTIMOON completes each table with carefully selected ingredients and the delicate hands of Korean craft artists. The first plate, Samichochan, is served on “Gwol” by woodcraft artist Lee Jeonghoon.

CHARCOAL

Charcoal stays as an echo

  • The heat of charcoal closes the surface and cooks what is inside.
  • The aroma stays not as smoke, but as an echo.
  • In this Yeouido Korean Fine Dining restaurant, fire is not a tool — it is an ingredient.

SPACE

Seats that face the charcoal

A dining hall, an island kitchen, and two private rooms for four to six. The course unfolds across a whole basement floor of this restaurant, given over to fine dining.

Craft and table

The vessels are the work of Korean craft artists. Glassware and drinks are chosen as part of the same table — how this restaurant finishes a setting.

CHEFS

Chefs and team

A team of ten, led by Owner Chef Joochun Jung and Executive Chef Yoonhaeng Heo, completes the Korean Fine Dining course at SUTIMOON.

An excellent dining experience. The food was delicious, every dish was beautifully presented and full of flavour. The ambience was lovely and made for a very enjoyable evening. The service was what impressed us most. The staff were warm, attentive, and spoke excellent English, which really helped us understand and appreciate each course as foreign visitors. One member of our group chose not to have the alcohol pairing, and the head chef kindly offered him a complimentary glass of sparkling tea instead. It was a thoughtful gesture that we really appreciated.

Super recomendo.
